This past Sunday, I took the rainy day to bake up a storm. Using the simple ingredients in my cupboard, I turned organic stone ground oats, walnuts, and raisins into a morsels of pure goodness.
Because of the raw sugar, the cookies were not too sweet; the stone ground oats provided a crunchy texture; the raisins added a hint of plump sweetness; and the walnuts added a rich heartiness.
After sharing with my boyfriend, co-workers, and friends, I’ve been informed that the only way to describe them is “right.” Now I don’t know about your hometown lingo, but here in NYC, that’s a damn good compliment! Cheers!

Recipe
1 cup (2 sticks) salted butter, softened
1 cup raw sugar (I use Sugar in the Raw)
2 cup dark brown sugar
2 eggs, beaten (I use brown, organic eggs)
2 1/2 cups quick-cooking oats
2 cup all-purpose whole wheat flour
1/2 teaspoon sea salt (I use Maldon)
1 teaspoon baking powder
1 teaspoon baking soda
Cinnamon to taste
Organic raisins to taste
Raw walnuts to taste
Preheat oven to 375 and lightly grease cookie sheets.
Using an electric mixer, cream butter and sugars together in a bowl until fluffy. Add eggs one at a time, beating well after each addition. Add vanilla. Mix oats in a bowl with flour, salt, baking, powder, and baking soda; add to creamed mixture. Mix well. Stir in walnuts and raisins. Roll into balls and place 2 inches apart on cookie sheet. Bake for 10 minutes.
