November is a big deal in my life. Not only is it my birthday month, but it also sparks the start of the most festive season of the year. Don’t get me wrong – I love me some summer, but there’s something about the holiday parties, sparkling lights, and general merriment of the late fall that warms me up from head to toe. Extra glasses of champagne don’t hurt, either.

So until we get to my second favorite day in November, check out my pick below for the best Thanksgiving side dish. My dad has made these for as long as I can remember, and they’re hands down the biggest hit every holiday. Check out the top-secret (and truly, truly basic) recipe below!World-Famous Roast Potatoes

  • 3 pounds (about 4 large) russet potatoes, or more, depending on your number of guests
  • Oil for cooking

Directions: Peel potatoes and grate a fork around each one, giving them a bit of rough texture. In a large pot of boiling water, add the potatoes, return pot to a boil, then immediately remove them and rinse. In a shallow pan, add oil about an inch deep and add potatoes, tossing to coat. In a preheated 450ºF oven, cook potatoes for 1 – 1 1/2 hours, until potatoes are golden brown. Be sure to turn them every 15 minutes to ensure even cooking! And be prepared to make them often. This is one way to ensure a big hit at the dinner table!
