What happens in Vegas...

It’s been about two months since I returned from my summer holiday in North Carolina’s Outerbanks and I’m already itching to get away again. Even a creature of habit like me needs to escape and recharge my batteries, which is why I’m so jazzed about a deal I found at the Four Seasons Hotel Las Vegas. Having long been regarded as the best in the business, the chain’s rates are consistently far beyond my travel budgets, but with rates as low as $169 a night at their Vegas hotel through December 2009, I’m about to start packing my bags right now. My boyfriend and I are obsessed with roasted potatoes. They’re a perfect accompaniment to any dish, and are delicious, cheap, and incredibly easy to prepare. Our favorite recipe is by Rachael Ray, a fellow foodie who can appreciate a good, affordable meal, just like us! Pairing this side is easy, too. They go well with anything from pan-seared fish to poultry, beef and veggie dishes alike.

  • 2 pounds small fingerling potatoes
  • 6 cloves garlic, crushed
  • Extra-virgin olive oil, for drizzling, 1 to 2 tablespoons
  • Salt and pepper

Directions: Heat oven to 500 degrees F. Spread potatoes evenly on a cookie sheet and scatter garlic on top. Coat lightly with extra-virgin olive oil and season with salt and pepper. Roast until tender, about 20 minutes.
